- These are from Rose Levy Berenbaum's "Christmas Cookies," and are quite good.

- Ingredients:
- 1 1/3 cups UNSALTED coarsely chopped cashews
- 2 cups unbleached white flour
- 3/4 tsp baking powder
- 3/4 tsp baking soda
- 1/2 tsp salt
- 3/4 cup + 2 tbs light brown sugar
- 1/2 cup unsalted butter
- 1 egg
- 1 tsp vanilla
- 1/2 cup sour cream

- Preheat oven to 350 degrees. Soften butter. Mix flour, baking powder and soda,
- salt, and cashews. Cream butter and sugar; beat in eggs and vanilla. Mix in
- sour cream. Add flour mixture. Drop dough by teaspoons onto greased cookie
- sheets. Bake 10-15 minutes until golden brown. Makes roughly 6 dozen.
